As an Alexandria Cosmetic Dentist I enjoy going to this Institute and seeing all of their new developments in techniques and materials.  It is a unique setting and they are committed to providing the highest level of training they know.  This month I am attending a communication and leadership seminar that I believe will be very insightful and educational. It is called Lava by 3M and involves a small wand about the size of a candy cane that is waved over different areas of the teeth and allows a lab to create an even more precise impression often eliminating the need to use cord impregnated with epinephrine to retract the gum tissue for an accurate impression.  Earlier generations of this were in the model T phase I believe but this particular system has all the high-tech features we need to assure accurate "impressions" of teeth to assure a superior finished dental Porcelain veneer or porcelain crown. It is happening across the country and across the world.  As a northern virginia cosmetic dentist i have seen it happen to soooo many people, young and old.  As more beverage companies develop more ways for us to drink more water you will see that most fruit flavored water has citric acid in it.  If you are drinking lots of these flavored waters you might want to limit yourself to 2-3 bottles a week as it is essentially an acid wash that literally washes away the enamel.  Carbonated beverages are also a source of enamel erosion, the tiny bubbles that fizz in our mouths bubble away tooth structure about as fast!  So be careful, as your dentist I am happy to discuss this further with you. I had met him at a restaurant in Charleston , SC.  It turned out that he had been born with only 10 permanent teeth and at 21 years of age still had numerous baby teeth and several areas where he was missing teeth.  I got a group of friends together from all of the specialties of Dentistry and met at a Prosthodontist friends office in Arlington, Va to review his case.  We pooled all of our resources and began the task of diagnosing his case.  It was very interesting, our orthodontist is Dr David Hughes from Springfield and he started the patient in braces  to put all the teeth in the proper position.  We also saw him here in Alexandria and determined he needed bone grafts and implants.  We are meeting later next month to formulate his restorative plan, all of these doctors are giving their time and experience at  no cost to this needy person.  It has been as exciting for us as it has for this patient. Myo!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.miorestaurant.com/"&gt;Mio Restaurant&lt;/a&gt;&lt;br /&gt;1110 Vermont Ave, NW&lt;br /&gt;Washington , DC 20005&lt;br /&gt;&lt;a href="http://www.miorestaurant.com/"&gt;www.miorestaurant.com&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Between Thomas Circle and L Street&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;By Charley Varipapa and Barbara Bartow&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Several month's ago I told  Barb my experience of looking for Chef Stefano Frigerio who had left Maestro's in May of last year,  for a concept restaurant in Baltimore.&lt;br /&gt;&lt;br /&gt;It did not take her long to find the chef, and mere minutes later I was on the telephone with charming owner Manuel Iguina.  I asked what it was he had done to deserve having Stefano as Chef in his 6 month old restaurant.&lt;br /&gt;&lt;br /&gt;Iguina knew only that he had been blessed (to what degree we find out later).  It was 2:30 in the afternoon as I excitedly prepared for  an 8PM dinner reservation, I was ready at 3 and sat with my bulldog "Mookie"counting the hours before I would leave for Mio.  Barb picked me up fashionably late (she is quite fashionable) and we could not get to Mio quickly enough, I exited her car while it was still moving and ran to the door like my hair was on fire!  Imagine my surprise when I walked  toward the kitchen in the rear of this excruciatingly hip, Sexy Beast of a new restaurant* and saw not only Frigerio, but Nicholas Stefanelli** who had returned from New York where he had helped former Maestro Chef Fabio Trabocchi garner a three star rating.  Pinch me! Two for one!&lt;br /&gt;&lt;br /&gt;The nine pounds I had lost since Maestro's closing were about to be found.  Eight trips later I thought it was time we gave Mio it's due by sharing an experience of ours and a companions dinner at the "Chef's Bar." Perched on three  barstools we began our journey (my behind, not as tough as it was when I was younger was a tad sore as we reached the end of our meal).  Starting with Restaurant Manager Juan Jimenez we could not miss with superb service and superior wine selections.  Previously the table had a waiter but that has changed where the Chef served our meal and Mr Jimenez managed our wine and water service. Several times Manuel Iguina took time away from his own guests  to attend to our comfort and chat a bit.  The first selection was a white Abarillio from the northwest region of Spain that borders Portugal, it was an excellent choice light yet flavorful perfect for our first courses.&lt;br /&gt;&lt;br /&gt;We started with a poached turkey egg with a drizzle of olive oil and shaved truffle accompanied by asparagus which were sauted and delicious, a simple treat delightful with our Albarillio. Barb: I really appreciated that the asparagus had been properly trimmed. Why do so many restaurants serve asparagus with unpeeled stalks?&lt;br /&gt;&lt;br /&gt;Then came Mio's very delectable,  cuttle fish soup with english peas, rich in flavor and and powerfully salty like the sea. So good I wanted to pour it on my head and rub it into my hair!  Barb: I  found the broth inedible is was soooo salty, but  the cuttlefish was tender and paired nicely with fresh peas.  It was served with thinly sliced toasted Italian bread.&lt;br /&gt;&lt;br /&gt;This was followed by hamachi tuna seared, hot on the outside cool on the inside, tender and delicious. This was accompanied by tuna carpaccio with hints of jalepeno,  tangy but not hot.  &lt;span style="font-weight: bold;"&gt;Barb:&lt;/span&gt; &lt;span style="font-style: italic;"&gt;This was my favorite dish of the evening and the lemon sorbet that came with this dish was perfect, drizzled with a little olive oil. &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Soft shell crabs  followed, sauted and served on a bed of ramps with manilla clams and resting in a pool of tasty green sauce made from the ramp tops and clam juices.  This was a delicate yet flavorful dish. &lt;span style="font-weight: bold;"&gt;Barb:&lt;/span&gt; &lt;span style="font-style: italic;"&gt;I love soft shell crabs, and combined with the ramps the flavor was sublime but the crabs were past "soft" and were a little crunchy.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;To pair with our next courses Manny appeared with a 2002 Montes Alpha from Aurelio Montes a chilean Syrah which was a perfect companion to what was to come.  I'm no wine expert but this was good, bold and quite enjoyable. Then came the little "rabbit popsickles" tender loin chops served in a shallot and sherry sauce over three al dente pot-stickers  stuffed with rabbit confit, the Easter Bunny would have been proud!  I love rabbit and have not had it so good since Dario Leo's Rabbit with Chocolate Fettucine, where is Dario anyway?  &lt;span style="font-weight: bold;"&gt;Barb:&lt;/span&gt; &lt;span style="font-style: italic;"&gt;Stefano's rabbit is tender and the accompaniments are carefully thought out to create a beautiful combination of taste and texture, but my potstickers were not cooked enough, not quite al dente. &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Did someone say  "I love pork" your wish is Frigerio's command, a baby piglet chop slightly undercooked for some (Barb) perfect for others, a finely done head cheese with fresh herbs and stuffed leg with a puree of potatoes, magazine cover perfect whose flavor and creation was masterful. &lt;span style="font-weight: bold;"&gt;Barb:&lt;/span&gt; &lt;span style="font-style: italic;"&gt;I approve of a chef who is confident enough to serve a slice of very good head cheese to his guests. &lt;/span&gt;Chefs too often play it safe and serve food that is not adventurous enough. I was served a very good lasagna bolognese by one of D.C's finest chefs. When I was presented with the recipe I noticed that a key ingredient was not included...chicken livers. When pressed, the chef admitted that he had left it out of the recipe because he didn't think that Americans would want to add an organ meat to their sauce when they prepared it at home.  But this ingredient was key to the compexity of the sauce.&lt;br /&gt;&lt;br /&gt;A grapefruit sorbet on pistachio crumbs cleansed our palette before  dessert which was a very good butterscotch pudding with warm toast foam. Next a cheese  plate served at the proper temperature and a perfect portion.&lt;br /&gt;&lt;br /&gt;I think everyone will enjoy this restaurant because it is not overly fussy, the food is excellent and full of flavor, portions adequate and you cant beat the service, They are serious about cooking but are not taking themselves seriously, fabulous food, the nicest people, It's just FUN with a capital F!&lt;br /&gt;&lt;br /&gt;It is fascinating to watch and talk with Stafano and Stefanelli  who place such emphasis on fresh ingredients. and take care to ensure that the combinations presented work well together. Sauces are carefully prepared using these to assure a bounty of flavor in your meals. I believe that this new  wave of younger chefs like Frigerio and Stefanelli who along with their peers  (Chefs  Eric Ziebert, Barton Seavers, John Kozic, Tony Chittum and Brendan Cox to name a few) are re-writing the way Washingtonians dine. We are engaged and excited when dining in their restaurants. Frigerio and Stefanelli know the farmers and in some cases have met the piglets and baby lambs.  Their vegetables are a collection from local farms and farmers they have built relationships with over the years.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Barb:&lt;/span&gt; &lt;span style="font-style: italic;"&gt;I had a terrific and memorable dining experience. There were so many different dishes and flavors with the fresh, high quality ingredients being the stars.  I highly recommend sitting at the kitchen bar where you can observe the attention to detail and how each dish is prepared and executed. Sandy is a psychologist and trainer.  She worked with us on listening and hearing.  So often we may think we understand what someone wants or desires but we have really not heard them.  We try our very hardest to listen well and understand peoples desires and how they want us to help them.  One of the values that our office is rooted in is honesty.  We are always honest with our patients and our patients are honest with us, we have made that agreement with them from the "git go" as they say in Southern Maryland.&lt;br /&gt;&lt;br /&gt;The class was really excellent, Sandy is a terrific teacher, she was once the vice president of The National Organization of Women and was an instrumental player in the women's rights movement back in the 60's and 70's.  She and her husband Doug (also a dentist) live in Central Florida.&lt;br /&gt;&lt;br /&gt;As a cosmetic dc dentist serving Northern Virginia and the Maryland Suburbs I believe it  is very very important to take the time to listen and understand people really really well prior to discussing treatment options.  Someone who has an understanding of the unique needs on an individual can better serve them.&lt;br /&gt;&lt;br /&gt;We are thankful and grateful to all of those who chose us to serve their cosmetic dental needs and especially grateful to the caring people who allowed us to use their before and after photos so that others may see them and have hope for their future of having a healthy mouth and smile! Many people who market themselves as a cosmetic dentist may not have had significant training in the science and techniques of cosmetic dentistry.  The Seattle Institute (www.seattleinstitute.com), The Pankey Institute (www.pankeyinstitute.com) and the Kois Center for Dental Excellence (www.koiscenter.com) carefully integrate the Science and Art of Cosmetic Dentistry.  I have attended and completed studies at these institututes and have attended the Las Vegas Institute which is world known for training in cosmetic dentistry.  One size does not fit all however.  People are different and their bites are different and subsequently they need different remedies for treatment, that is why I have extended my training to include all of these institutes and learn what is best for our patients.  Guests in our practice can be certain that they will be treated individually and there are no cookie cutter plans, all the same for everyone.&lt;br /&gt;&lt;br /&gt;Veneers were initially used as an esthetic restoration but now we use them to restore even broken and misshapen teeth.  They can be a tooth strengthening restoration in these cases and provide a beautiful natural restoration because they allow light to reflect through the tooth and back out creating a natural appearance.  The edges are much more bio-compatible than a cemented crown because they can be integrated to tooth surfaces and porcelain laminate veneers can improve health and tissue appearance.  Beautifully prepared veneers that are polished and finished can be undetectable from natural healthy teeth.&lt;br /&gt;&lt;br /&gt;Natural smiles have a golden proportion that is pleasing to the eye.  While there are scales to calculate this it is usually best to develop a natural smile that is specific to each individuals, these formulas only serve as guides.  To function properly teeth need to be the proper length and 'communicate' with the lower edges od the teeth when speaking or in function. you'd be surprised how often incisal edge position is ignored in so called 'COSMETIC DENTISTRY" practices.  &lt;br /&gt;&lt;br /&gt;The word restore means the return to natural form function and beauty.  Imagine spending the time, money and energy to restore your beautiful smile with cosmetic veneers or porcelain crowns and never being able to bit e a cuticle again!  A simple thing but a comforting thing to be able to do again.  I will be happy to discuss your choices to restore or enhance your smile here in DC.  Many times your treatment can be easy for you and very conservative. Since I was seven, I dreamed of one day becoming a national champion wrestler. That dream carried me to becoming a state champion, Maryland national team member, and making the Washington Post's "All-Met" team. As I began to wrestle at York College of Pennsylvania, my dream was suddenly ended when I had my third, double knee surgery, and I was forced to throw in the towel.&lt;br /&gt;So I had to find something else to concentrate all my ambition and hard work towards. I found that "something else" when I came home from school, and was introduced to Dr. Charley Varipapa. In May he hired me as his dental assistant, and got me started right away. In a few weeks time I had already learned how to assist with preparation and deliver veneer cases, take x-rays and digital photos, and as his only dental assistant, was feeling extremely confident in how my efforts were contributing to the practice. Soon I found that I had a strong interest in dentistry. Having learned more about the profession from Dr. Varipapa, I decided to change my major. I was thrilled with this new change. As time progressed Dr. Varipapa offered to take me to the brand new University of Maryland Dental School in Baltimore so I could get a feel for the school and the field of dentistry.&lt;br /&gt;&lt;img src="http://www.oldtowndentist.com//dental%20002.jpg"/&gt;&lt;br /&gt;Visiting the University of Maryland, Baltimore College of Dental Surgery was not a disappointment in any way, shape, or form. In fact, it only made the idea of one day becoming a cosmetic dentist so much stronger. I saw the incredible robotic patients pre-clinical students learned on, the lecture rooms, and the incredible clinics which have motivated me to continue working vigorously in school so that I can one day attend school here. After being introduced to a lot of nice people, I found out that Dr. Varipapa taught at school here from 1989 until 1995. It amazed me that he knew everyone there from the Dean, right down to the ladies that cleaned the clinics. Recently the Dean has asked him to join the Dean's Faculty and to come back and teach one day a week. Dr. Varipapa said he planned to go back in January of 2008. With his training and artistic skill in Cosmetic Dentistry, Dr. Varipapa will surely be an asset to the school. I hope he stays till I get there too!&lt;br /&gt;&lt;br /&gt;For those of you I have not met I would like you to know that I look forward to meeting you and learning more about you. Digital X-rays mean less radiation for our patients and friends of the practice and clearer pictures for us which helps diagnostically.  It is also a nice format for sharing x-rays with specialists. Veneers were originally used to make cosmetic changes and then as we saw how durable they were and learned how stong the bond between porcelain and enamel is we started using them more often to restore teeth.  The bond between porcelain and enamel is one of the strongest there is and has proven to be much stronger than a cemented crown.  Studies are showing veneers banded to enamel are lasting over 17 years.  Some no-prep veneers can appear to be bulky and not as esthetic as veneers that are building up the fronts of the teeth. There is currently a worldwide search going on.  Fabio Trabocchi left in August for Fiamma in NYC and will be involved as a chef partner and in the opening of hotels in Hawaii and LA as well as Washington, DC.  Anyone craving an exceptional fine dining experience I would recommend trying Cityzen in the Mandarin Oriental Hotel in DC.
